Description:
Cascabel means rattle and is due to the rattling of the seeds when the pods are shaken. Cascabel chile is quite mild, has a warm, slightly chocolaty flavor, and is used especially in the preparation of salsa, stews, soups, and tamales. After roasting, the chile develops a nutty aroma. It goes perfectly with beans and generally with dishes based on tomatoes.
Usage:
Cascabel chili is popularly used to prepare salsa. To do this, soak the chilies in warm water for a maximum of 20 minutes and then grind them. If necessary, roast over an open flame or in the oven beforehand to generate a nutty aroma.
