Description:
Seaweed is a popular “vegetable” in East Asia and is used both as a side dish and as a seasoning. Originating in China, this sea vegetable became a staple in the cuisines of Korea and Japan, with the latter also introducing its use to Europe. Dishes such as sushi, maki, and miso are on the menu at almost all relevant restaurants.
In Japan and Korea, wakame is a prized ingredient in salads and soups, especially the well-known miso soup. It has a savory flavor and, due to its high iodine content, a distinct oceanic taste.
Made from the seaweed root (Kuki Wakame).
Usage:
Soak the seaweed in boiling water for at least 5 minutes. The resulting “broth” can also be used. Seaweed has a high iodine content and should be used sparingly if you have a known intolerance.
